Quinoa Tacos, Guacamole, Copy Cat Ortega Mild Sauce

This is one of my favorite meals!
Quinoa Tacos
Cooked quinoa (1 c dry)
15 oz can tomato sauce
3 Tbsp copy cat "old el paso" taco seasoning (see below)
salt
Cook quinoa in instant pot: 1 cup dry quinoa, 2 c water, pressure cook for 1 minute and let sit for 10 minutes before releasing pressure. Add tomato sauce, taco seasoning and salt. Let sit overnight for flavors to mix. When ready to serve, heat in skillet.
Copy Cat "Old El Paso" Taco Seasoning Bulk Recipe (I store in 3 cup capacity jar)
6 Tbsp "chili" powder 15 Tbsp "chili" powder
5 tsp paprika 4 Tbsp + 1/2 tsp paprika
4 1/2 tsp cumin 3 Tbsp + 2 1/4 tsp cumin
2 1/2 tsp onion powder 2 Tbsp + 1/4 tsp onion powder
1 tsp sea salt or 1 1/2 tsp celtic salt 2 1/2 tsp salt or 3 3/4 tsp celtic salt
1/2 tsp garlic powder 1 1/4 tsp garlic powder
Mix all. Store in air tight container.
Serve in taco shells with the following fixings :)

Guacamole
2 mashed ripe avocados 1/2 tsp garlic powder 1 1/2 T lemon juice, optional 1 1/2 tsp onion powder 3/4 tsp salt
Mix all together; then fold in 1 cup finely chopped tomatoes.
Sour Cream
12.3 oz box silken tofu
1/3 c almond milk
1 tsp salt
1 Tbsp lemon juice
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cumin
Blend all. Chill before serving.
Copy Cat "Ortega" Taco Sauce
15 oz tomato sauce
1/2 tsp "chili" powder
1 1/2 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
1/16 tsp 140,000 HU cayenne pepper, optional
2 Tbsp lemon juice
1/3 c water
Mix all. Let sit overnight.
We freeze half and store the rest in refrigerator.
"Chili" Powder Seasoning Bulk (I store in 3 cup capacity jar)
2 Tbsp paprika 10 Tbsp paprika
2 tsp oregano 3 Tbsp + 1 tsp oregano
1 1/4 tsp cumin 2 Tbsp + 1/4 tsp cumin
1 1/4 tsp garlic powder 2 Tbsp + 1/4 tsp garlic powder
3/4 tsp onion powder 3 3/4 tsp onion powder
Mix all, Store in air tight container.
