Vegan Burgers & Copy Cat Arby's Fries!

Being the frugal person that I am, I rarely (and I mean RARELY) eat out. Therefore when my husband craves certain foods that he used to eat at restaurants, I try to make them homemade :)


It's been a while since I have made these burgers as my food processor has been out of commission so they were long overdue :) I have adapted my recipe from here.
Burgers

1 1/2 c water
1/3 c ground flaxseed
1/2 c walnuts
3 c rolled oats
2 Tbsp copy cat Red Robin Seasoning
1 tsp salt
Your choice of:
1 medium onion, diced
8 oz mushrooms, chopped
Whisk water and flaxseed together. Combine onion or mushrooms and walnuts in food processor until finely chopped. Add oats, seasonings, and flax mixture. Pulse until smooth. Using 1/4 c batter, shape into patties and fry.
I like to shape them into patties and then freeze. After frozen I place in a freezer bag and have them ready whenever I need them. I place them frozen into an oiled skillet and fry. I usually make a batch of each set - one of onion, one of mushroom - for the freezer as the girls and I prefer the onion and he prefers the mushroom :)
Frugal tip: I bought a set of 3 silicone baking liners on amazon for $12 and that keeps me from having to buy wax paper when freezing foods like this and it keeps the food from touching aluminum pans while baking :)
Copy Cat Red Robin Seasoning - Bulk
1/4 c sea salt
1/4 c smoked paprika
2 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp "chili" powder
1 1/2 tsp cumin
1 1/2 tsp basil
1/2 tsp sage
1/2 tsp oregano
1/4 tsp celery seed
Mix all. Store in air tight container.
Copy Cat Arby's Fries

6 large potatoes (2.5#) 4 tsp paprika 1 Tbsp tsp salt 1/2 tsp garlic powder 1/2 tsp onion powder
1/8 tsp California chili, optional (I leave out) 1 Tbsp olive oil
Preheat oven to 450. Bring a medium sized pot of water to boil. Cut into fries. Put potatoes in boiling water for 3 minutes. Drain & rinse potatoes in strainer with cold water. Combine seasonings and oil. Mix well and coat fries. Place onto baking sheet lined with parchment paper. Bake 35 minutes, flipping a couple of times.
OR if you don't really care if they are JUST like Arby's fries but want the same flavor:
Cut the potatoes and place them in a stainless bowl. Add remaining ingredients and coat evenly. Pour onto parchment lined or silicone lined pan and bake at 350 degrees until desired crispness, usually 30 minutes.
Frugal tip: Store remaining leftovers in a jar! :)
